Our Story

We believe in the life changing power of food. And we believe that whether you're enjoying a leisurely meal with family or grabbing a quick snack on the go, food should give you both power and pleasure.

We also believe in the importance of helping others and giving back, whether that's picking up litter in your neighborhood or donating to your favorite causes.

In 2019, we founded Kelsi's Kitchen with the goal of creating Life Changing Chocolate that would reflect these two, core beliefs.

We hope that by giving you a nourishing and delicious treat we can empower you to be your best every single day. We also hope that by donating 10% of our profits to ALS research and support we can provide some small assistance to the community of people affected by a truly debilitating disease with no known cure. 

 

About Kelsi

As the youngest of eight, I spent much of my childhood with my mom in our kitchen, where I first became interested in food.  

When I was ten, a serious health scare led my mom to adopt an enzyme-rich diet, the Raw Food Diet, and after several years watching and learning from her I decided to also go raw.

Eating raw during middle and high school required an incredible amount of discipline and planning, and together my mom and I spent months studying the art and science of raw food. First, we went to the Ann Wigmore Natural Health Institute in Puerto Rico, where we learned about how sprouting and fermenting foods can help create a healthy gut and ultimately help heal your body.  Next we went to the Living Light Culinary Art Institute in California where we learned about the gourmet possibilities of a Raw Food Diet.  

 

Back in Idaho we started teaching Raw Food classes, and a decade later, after moving with my husband to Utah, I still had students asking for our Bites every time I returned home.  Eventually I realized that our bites were an important way to help others on their wellness journey, and with lots of encouragement from my mom, who told me I was preparing my whole life to launch Kelsi's Kitchen, I began selling them in Idaho Falls. Just when I was bringing Kelsi's Kitchen to life, my mom was diagnosed with ALS, and three months later, in September, 2019, she passed away.

Shortly afterward, my partner, Cassandra, joined Kelsi's Kitchen, and we officially became a team of two! Together, and with the incredible support of our families, we've spent countless late nights and early mornings hand making and delivering our bites.  Kelsi's Kitchen has been a real source of joy for me, not only because we can bring life changing food to others, but also because it enables me to share what my mom and I learned with a larger community.
